I’m a big fan of summer. I’m not a big fan of being pregnant in the summer, though. I feel like I have an extra heater inside me and don’t like always feeling hot when it would normally be a comfortable temperature outside if I was pregnant!
I’m also a big fan of ice cream. I’m not a big fan of refined sugar. Or I should say, I like sugar, but know it is bad for me and the baby. 🙂
These two things led to my Pinterest search for an easy & healthy ice cream. One without refined sugar and that isn’t going to have me standing over the stove heating a custard-type mixture for ice cream. I don’t need that extra heat! 🙂
I made this Chocolate Coconut Milk Ice Cream last night and I’m in heaven! It is delicious! It was SO easy! You can make it with or without an ice cream maker, which is a plus! You can also pour it into popsicle molds for fudgesicles! I tweaked the recipe I found, and here it is, with my updates:
Easy & Healthy Chocolate Coconut Milk Ice Cream & Fudgesicle Recipe 1 – 13.5 ounce can of full-fat coconut milk (I chilled the can in the fridge for a few hours ahead of time, but you don’t have to) 1/3 cup raw honey 1 teaspoon vanilla extract 1/4 cup cocoa powder Mix the milk, honey and vanilla extract until they are well mixed (the thick honey takes a bit to mix in). Then add in the cocoa powder using a whisk or a fork until it is all incorporated. You can either pour the mixture into your ice cream maker, or simply pour it into an airtight container and put it in the freezer!
I put it into my ice cream maker, but the bowl wasn’t frozen enough, so it really didn’t do much. I just poured it into an airtight container and stuck it in the freezer. It is so yummy!
Next time, I might add some peanut butter or almonds to it! Yum!
