Last year for Valentine’s Day, I hosted a Valentine’s Tea Party for my then 2.5 year old and two of her little friends. Heart-shaped petit` fours and cucumber sandwiches and other themed treats. It was so much fun, so I decided to make it an annual event!
This year I was looking for a Paleo recipe that was
a) delicious
and
b) kid-approved
Then during a Costco shopping trip one day, I saw the fresh pomegranate arils in the refrigerated section and it all clicked! Chocolate-Covered Pomegranate Arils! So simple and SO delicious! And using the Enjoy Life Semi-Sweet Chocolate Chips
makes them (almost) Paleo. They still have evaporated cane syrup in them, but I know that many Paleo bloggers still use them in their recipes. So that’s why I say Paleo(ish) 🙂
Chocolate Pomegranate Treats – Pomegranate Arils – Enjoy Life Semi-Sweet Chocolate Chips
(I used the Mega Chunks, but I’ve also used the mini chocolate chips and they both taste the same) Melt chocolate chips in a double boiler over low heat, stirring frequently. Once melted, pour thin layer into the bottom of each candy mold or mini cupcake liner. I used these Martha Stewart Crafts Vintage Girl Mini Cupcake Wrappers
and a mold very similar to
for the heart-shaped chocolates. Add pomegranate arils, then cover with more melted chocolate. Let set in the refrigerator for at least an hour. Enjoy!
I wish I could accurately convey just how delicious these are through the internet 😉 I guess the photo will have to do! But trust me and just make some for yourself. You won’t regret it!
